  • 6 cups romaine lettuce chopped
  • 1 cup salami sliced
  • 1 cup pepperoni sliced
  • 1 cup mozzarella balls or cubes
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives
  • 1/2 cup green olives
  • 1/4 cup red onion sliced
  • 1/2 cup marinated artichoke hearts drained
  • 1/4 cup roasted red peppers sliced
Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. Wash and dry lettuce, then place in a large bowl.
  2. Add salami, pepperoni, mozzarella, tomatoes, olives, onion, artichokes, and roasted peppers.
  3. In a small bowl, whisk together dressing ingredients.
  4. Drizzle dressing over the salad.
  5. Toss gently to combine.
  6. Serve immediately or chilled.
